So how does Flo Hockey work? If you sign up, do you get games from all the leagues they cover, or do I have to select one? Would I be able yo watch both, the GOJHL, and the OJHL with a subscription?

Yes, you could watch the GO and the OJ with just a single subscription, and many other leagues as well.
